Mini Lemon Blueberry No-Bake Cheesecakes!

These little lemon blueberry cheesecakes are spectacular!  They are super easy to make and give your dessert game a total WOW factor! Cut your lemons in half and use a spoon to scoop out the pulp, leaving the skin. Make your graham cracker crust, then your cheesecake filling (your recipe or a box!). Put some of the graham cracker mixture into the lemon and press it into the bottom with the back of a spoon. Add the cheesecake filling. Nothing says SPRING more that a delcious carrot cake! We've replaced the water in the original recipe with a 1/2 cup strong steeped tea (you can use a black tea or a rooibos!) Today we used our Carrot Cake tea that is in our April Tea Box this month! We then took some Chai and finley ground it and put it into the frosting to drizzle it on the cake.
