No-Churn Lemon Curd & Cookie Ice Cream

You know, when you're in the store, and you're like.....what do you do with this jar of Lemon Curd??!!! THIS.....THIS IS WHAT YOU MAKE!!
Now, we've made lots of things with our lemon curd, but this will now be a forever favorite, lol!
Gather your ingredients:
2 cups cold, heavy cream
14oz can sweetened condensed milk
1 tablespoon lemon zest
¼ cup freshly squeezed lemon juice
⅛ teaspoon fine sea salt
6 oz coarsely chopped (broken up) Lorna Dune Cookies
10 oz jar lemon curd

In a medium bowl whip cream at medium-high speed until stiff peaks form; set aside. Whisk together sweetened condensed milk, lemon zest,lemon juice, vanilla, and salt.
Fold one-third of the whipped cream in with a spatula. Then fold the remaining cream until well-blended. Mix in broken cookies.
Spoon half of the mixture into an 8"x8" baking dish (a bread loaf pan works well too!) Dollop with half of the lemon curd. Use a butter knife to lightly swirl curd into ice cream.

Repeat with the remaining cream mixture and the lemon curd. Freeze uncovered until firm (4-6 hours). Serve, or store in freezer for up to two weeks

Soooo creamy, sooooo lemony, and the cookies just give it the perfect buttery crunch!
You'll be in heaven!!
