Mini Lemon Blueberry No-Bake Cheesecakes!

These little lemon blueberry cheesecakes are spectacular! They are super easy to make and give your dessert game a total WOW factor!
Cut your lemons in half and use a spoon to scoop out the pulp, leaving the skin. Make your graham cracker crust, then your cheesecake filling (your recipe or a box!).
Put some of the graham cracker mixture into the lemon and press it into the bottom with the back of a spoon. Add the cheesecake filling. Top with blueberry jam, then fill a piping bag with lemon curd and drizzle it on top. Top with a mint leaf and a blueberry... go ahead now, be the talk of the town!!!
